Although I've lived in the US for over ten years, only recently have I been more open about what makes my country of birth different from the country I currently share with my husband. As an 18 year old, I quickly picked up on the fact that talking about slaughtering chickens, using an outhouse, or the absence of running water made people look at me differently. When you are trying to make friends and fit in, it's the last thing you want. The Alkaline Diet – Snake Oil or Common Sense?

There are a lot of fad diets out there. Often, they claim to be the ultimate healing regime. They will cure you of disease or cancer, melt the extra pounds right off your midriff, or make you look ten years younger. As soon as I start reading something that tells me that once I perform one special routine or purchase certain brands, I will start feeling amazing and all my health problems will go away, I move on. Some of these schemes have some great things to offer, but I am skeptical of their good intentions. Truth About Fats II : Vegetable Oil

For the last fifty years, the public has been bombarded with propaganda about the benefits of vegetable oil. Pork fat, beef tallow, and butter have been vilified and blamed for high cholesterol, heart attacks, cancer, obesity, etc. In this post I will attempt to trace the history of the vegetable oil and question whether it is indeed as heart-healthy as all the advertisements make it out to be. I will begin by introducing the different kinds of fatty acids. Saturated fats - found in animal fats and tropical oils. They have no double bonds between individual atom carbons. All the bonds are "saturated" with hydrogen atoms. Saturated fats are stable at room temperature, and ideal for cooking at high temperatures. Monounsaturated fats - found in olive, avocado, macadamia, and almond oil. They have one unsaturated carbon bond. They are not as stable as saturated fats, and thus they stay liquid at room temperature. [...]

The Truth About The Low Fat Theory

If you google images for cholesterol or heart attacks, you will inevitably end up looking through countless images of eggs, bacon, butter, cheese, and the like. Everybody loves bacon, and yet we are told it is a guilty pleasure that causes high cholesterol and coronary heart disease. I will begin with the origins of the "low fat hypothesis", or "lipid theory", since it is where our fears of consuming too much bacon and butter originate from. Wholesome Family Farm: A Raw Milk Photo Essay

Yesterday we visited Wholesome Family Farm. This is a photo-essay dedicated to what we saw at a small dairy farm here in Oregon. I am not recommending this one, above others. I believe that everyone should visit the farms they choose to purchase the milk themselves and decide if it is up to their standard of cleanliness and quality.  For more information on other dairy farms in Oregon and the rest of US visit realmilk. Roasted Chicken with Gluten Free Gravy

  I love roasted chicken but I love gravy with roasted chicken even more. This is a simple recipe we enjoy making on a regular basis because it tastes delicious, it has healthy saturated fats, it is great for left overs, and the gravy is gluten free. Roasted Chicken 2-3 pounds of farm raised chicken 1/2 cup of unsalted Kerrygold butter or olive oil 2-3 tsp dried or fresh Rosemary 1 tsp paprika 1/2 lemon 2 tsp freshly ground pepper 1 tsp Celtic sea salt 1/2 onion Preheat the oven at 400 degrees. Rinse the chicken with filtered water if available and then pat it dry with a paper towel. While it dries out completely, heat the butter, if you are using olive oil you do not need to heat it up.
