Killing Them Softly

The Killing Two days ago I witnessed the slaughtering of some of our chickens on the ranch. They were the meat chickens we’ve taken care of since we started living on the Spencer Shadow Ranch. Although I’m usually a mama bear to all of our animals, here I was wearing a red apron over my faded jeans and thick muck boots, ready to slit the throats of my very own birds. Drinking Broth Recipe

I love homemade chicken broth. I add it to soups, gravies, vegetables, rice, and really anything else that is simmering in my kitchen. Chicken broth does not only make all our food burst with flavor but it is extremely nutritious and healing. However, when it comes to drinking straight chicken broth, I am not a fan. Not in this universe. I am aware of its many benefits so I WANT to WANT to drink broth. One reason I am adamant about introducing more homemade broth into our diet is the wealth of nutrients it contains, like: amino acids, calcium , phosphorus,  glycosaminoglycans, and gelatin, to support our joints and immune system, heal our gut, and maintain a good hormonal balance. The Coconut Mama has a great article on the benefits of bone broth here. Roasted Chicken Liver For Breakfast

This morning I woke up with quite an appetite. I think subconsciously I have communicated to my body that I will be switching to a sugar free diet for the week. What could be more nutritious than: farm fresh eggs, raw butter, sour dough spelt bread, and ...organic roasted chicken liver for breakfast! Don't let me scare you away with my appetite for chicken liver. If you ask my husband whether I am a picky eater he will wholeheartedly say "YES!". We have had many dinners with me picking at my food, simply because of weird flavors, spiciness, or dry meat. In fact when it comes to livers I am also very particular. I don't like cow's liver. It is too potent and smells to grassy even after being cooked in delicious flavors, it retains the internal organ smell. The only way I eat it cow's liver is dehydrated and packed  into capsules. Deck Family Farm – A Photo Essay

Today we visited Deck Family Farm. We have been interested in joining their CSA for a while now, but we wanted to see their animals first. The farm is open to visitors every day except Sunday. You do not need to make an appointment. The entrance is closed so the animals don't get away, but you can remove the latch pretty easily and drive on in. The Deck family's house. We spied employees preparing a wonderful-smelling community lunch in the kitchen. We were welcomed by a few workers who were more than happy to answer our questions and show us around. The manager of the farm gave us a tour, but he said you can always visit the animals by yourself, if you want! This is part 2 of Steroids for Dinner. I will be exploring alternatives to eating industrial meat products. However I will first explain a few things about the labels on meat products. They can be both confusing and misleading. What's What 100% Grass-fed It means that the animals were fed a diet of grass and hay which is the natural diet for ruminants.There was no corn or soy in their diets. This is a safe label if you are looking for animals that were not raised on steroids, corn, soy, or other alternative foods. The cattle will be given very little antibiotics if any.   Grain-finished Animals were fed grass and then fattened with corn and soy before being slaughtered. Coconut-Ginger Chicken Soup

I am posting this recipe at the request of my dear friend Walter. Earlier this week he had a knee surgery and I made him this soup the night he came back from the hospital. I decided on a chicken-based broth soup vs a vegetable-based broth soup because I wanted the collagen and minerals in the broth to work their wonders on his knee. This recipe is one of my all times favorites. The coconut milk is full of potassium and calcium and the ginger with the lemon aids digestion. It is nourishing, delicious, and surprisingly filling. It is from Sally Fallon's Nourishing Tradition's Cookbook, page 199. I have made some slight alterations in order to adjust the taste to our needs, but feel free to experiment with it and add the ingredients according to your preferences. Roasted Chicken with Gluten Free Gravy

  I love roasted chicken but I love gravy with roasted chicken even more. This is a simple recipe we enjoy making on a regular basis because it tastes delicious, it has healthy saturated fats, it is great for left overs, and the gravy is gluten free. Roasted Chicken 2-3 pounds of farm raised chicken 1/2 cup of unsalted Kerrygold butter or olive oil 2-3 tsp dried or fresh Rosemary 1 tsp paprika 1/2 lemon 2 tsp freshly ground pepper 1 tsp Celtic sea salt 1/2 onion Preheat the oven at 400 degrees. Rinse the chicken with filtered water if available and then pat it dry with a paper towel. While it dries out completely, heat the butter, if you are using olive oil you do not need to heat it up.
