Superbowl Recipe Roundup (Gluten-Free, Dairy-Free!)

Tomorrow is the Superbowl and although I am not  a huge fan of professional sports (at all, really) I absolute love the food and the fellowship that often forms around it. Lately, things have been tough at gatherings like these, since I have been both dairy and gluten free. Fortunately, there are a lot of great cooks out there with similar needs, and the list of amazing recipes out there you can use to create wonderful healthy spread that avoids the gluten and diary just keeps growing. Not only are these snacks gluten and dairy free, but they are also made out of wholesome delicious ingredients. So this year toss the dorritos and give these real food options a chance. I promise you wont regret it. First things first, lets talk about main courses. Don't worry there are some lightweight veggie dips coming too.  Here is a low carb twist [...]

Living with 20 + Housemates

Ian: "Hey Diana can I use the coffee table to surf down the stairs?" Jacob:" Hey Diana can we build a blanket fort in the loft for the weekend?" Nigel: "So after my 10th cup of coffee today I stopped counting." Sally: "Who wrote the passive aggressive message on top of the drier using questionable language in permanent marker?" Meet my housemates... there's about 23 of these jokers.  When they're not trying to surf down the stairs on a coffee table, they're tackling philosophy, history, ancient Greek, etc. Well, not all of them - we do have a baby who likes chewing on books rather than reading them, and a few older residents who have regular old jobs, like me. But the rest are students at the small liberal arts college, Gutenberg, which Clayton and I manage the residents program for.  Although everyone else in the house  lives either in [...]

Heavenly Oatmeal

I was never a big fan of oatmeal. It just never tasted good to me. I love my eggs and bacon in the morning, but sometimes you just don't have time for it. Since my recent dietary changes and my (hopefully) temporary lactose intolerance, I had to give up things like my jar of whole milk for breakfast on the run. That's when I rediscovered oatmeal, but with a twist that makes it just heavenly, and oh so healing for your digestive tract. The secret, as usual, is in the toppings ;) I know, I know, its a lot of carbs and sugar. So I don't eat this every day and if I'm going to, it better have some good fats - coconut oil is a great candidate.  Raw honey and freshly crushed peanut butter or almond butter are great compliments. Don't knock it till you try it. For a [...]

Letter to my Grandpa

Dear Grandpa, I wanted to let you know I am coming home this summer... It's been more than three years since I opened your wooden gate and sat on your old clay porch feeding chickens together. Much has changed since for both of us and I have yet to accept that.  I live so far away and somehow Moldova and our little village, has frozen in time during the time of my eighteens. When mother came to visit last winter I gasped when she got off the plane. There were too many wrinkles I hadn't kissed yet, there were worries and a deep sadness set in the corner of her mouth that she couldn't hide. I didn't ask and she didn't say. Instead we opened a suitcase carrying aromas from my childhood kitchen- two homemade bottles of wine, bacon from the farm and homemade feta cheese.... The cheese wasn't from [...]

The No Poo Method: Doable or Disgusting?

After witnessing the public shaming/bullying of my best friend Jackie who blogs at LittleOwlCrunchyMama on the Today Show with Kathie Lee and Hoda (and the appalling flood of disgusted, unthoughtful, unkind comments questioning everything from Jackie's hygiene to her child rearing, integrity, intelligence, appearance, and so on when they shared the segment of their Facebook page) I decided now would be a good time to speak up about hair hygiene, shampoo health risks, and no-poo alternatives. Here is the segment to which I refer, at about 6.40 minutes in. WARNING: You're about to see some really mind-numblingly awful journalism.  While I was busy writing on the Today show's Facebook page demanding they offer an apology to my friend my phone rang. "I know you'll be honest with me.  Do you think my hair looks disgusting?" Jackie asked me as her image was getting slaughtered in the press. I cringed. My friend is [...]

Dairy Intolerance: The Good, the Bad, and the Ugly

Did you know that although more than 50 millions Americans are lactose intolerant, more than 70% of them don't relate their symptoms to the ingestion of lactose. Why? Because everyone seems to have a different reaction to a dairy intolerance, some symptoms being more obvious than others. A few days ago I asked my dairy-free readers on The Kitchen Rag's Facebook page if they had any other symptoms besides diarrhea, flatulence, bloatedess, or cystic acne - the more classic symptoms of a dairy intolerance- when they ingested dairy products. Here are some of their answers: The Bad "Oozing rash across the back of my fingers. Found out about lactose intolerance after a break from it. I still flirt with it sometimes, as it's hard to resist! Most immediate symptom seems to be the whole surface of my scalp seems to jump off within 24 hours... Not too pretty!" "Pain in my joints. Completely dairy [...]

New Year, New You Summit 2014: A FREE Online Conference!

For a long time, I relied on the medical establishment for advice. Every doctor's visited reaffirmed that I did not know the first thing about health, and I relied on them for guidance. I tried to drink in every little piece of information they bestowed upon me, but unfortunately they didn't give me much to work with. A visit to the doctor didn't usually take more than five minutes with an actual doctor (although I would wait for hours in the various staging rooms) and I always came home with list of questions I didn't get to ask since the whole thing was so "efficient". Since doctors didn't seem to have much time for me, I turned to books and the internet to do my own research. They pushed me to take my health into my own hands and make my own choices, and while real doctors are and usually [...]
